With so many flavours and brands, I'm not so sure I'd make 26 forums for every one A-Z. You'll have a lot of empty forums.
Maybe split it in half and do A-M and N-Z
Then if you get a lot in the first forum, split that in to A-G, H-M and N-Z etc and keep subdividing as you get more and more topics on a particular letter.
